The Abbey of Notre-Dame de Saint-Rémy was founded in 1230, where the monks began brewing as early as 1595, one of only eleven Trappist breweries in the world. Brewed using calcium-rich water from the Tridaine spring 42m above the abbey and a unique house yeast, the authentic Trappist beers of Rochefort are among the most respected in the world today.
Originally called "Spécial," Rochefort 8 dates to the mid-1950s. The name comes from the original gravity in "Belgian degrees."
