Mikkeller Baghaven is an exploration of spontaneous fermentation influenced by local terroir, crafting barrel-aged Danish Wild Ales and Rustic Shipyard Ales with native microflora on the Copenhagen harbor front. Baghaven is home to twelve large oak foeders, ranging in size from 3000 to 7000 liters, and over fifty 225-liter California Chardonnay barrels.

A wide variety of all Danish grown grains including malted and unmalted barley, malted and unmalted spelt, malted and unmalted heirloom wheat, and raw buckwheat. Gently hopped with hops from France and New Zealand and fermented and aged in an Italian red wine foeder with our unique yeast for 9 months. This Rustic Danish Shipyard Ale is a prime example of what happens when local grains and native yeast come together in harmony.
