2021 Two Tonne Tasmania TMV Riesling11007

The 2021 came from two spots from the Tamar: Hillwood and Relbia. Hillwood is a warmer site, a bit further north and closer to the ocean. This was blended with two small parcels from Relbia (where it is a little cooler, with deep soils and the fruit ripens a little later).
All parcels were pressed separately, then split into two small ferments plus a bit on old oak. The ferment was cold and slow, and was pulled up with a lick of residual to balance the natural acidity. The parcels were then assembled and then left on lees for about six months, before bottling in October (and being allowed to rest in glass until now).
