2021 Travis Tausend Handful

The Handful wine has been made from the same 15 rows of south west facing Semillon vineyard in Hope Forest for the last 7 years. The fruit from these 15 rows is so full of flavour and racy acidity it blows my mind. In the cellar we destem the Semillon and allow the wine to ferment on skins. The wine is tasted morning and evening until the tannins and acid begin to intertwine in an interesting way. At this point we press the fruit on a long slow press cycle to extract the wonterful flavours from those skins
