Pinot Gris from our organically farmed vineyard in Hahndorf, Adelaide Hills. Previously farmed by Rob Surman & since taken over by Lucy M, Château Comme Ci Comme Ça and Jean Bouteille. Implementing biodynamic practices & smoother pruning to allow a better fruit set through an easier sap flow. The hill soil is composed of clay over Schist and vines facing SouthWest for an optimum sun exposure & air flow. The Pinot Gris is hand-picked & carbonically macerated for a week, then foot-stomped to start a proper infusion of skin & stems in the grape juice. This is left sealed for three months in a stainless-steel tank. Pressed on the last warm day at the end of May, the Ronin is then gravity racked into old French barriques for a seven month elevage. Bottled without sulphites/fining/filtration : Pur Jus Wine.
After years working around the world making wine, beer, sake & farming, Jean-Baptiste Courdesses built a winery in Basket Range, South Australia. Jean Bouteille wines are crafted exclusively from organically grown grapes, focused on regenerative practice and made without any additions, fining or filtration, only grape juice : Pur Jus Wines. The wines reflect the place & the character of the grape varieties that come from farming respectful of the environment, fauna & flora. These wines are made with intuitive reaction & natural instinctive decisions. This playful series of wine comes from the love exploring scents, tastes and experiences to be shared.
