2021 Dr. Edge Tasmania Pinot Noir

Dr Edge Tasmania Pinot Noir is a blend of Derwent Valley (60%) Tamar Valley (30%) & East Coast (10%) fruit. All manner of whole cluster inclusion and partial carbonic maceration across each parcel is blended to the Dr's house style. Natural yeast ferments the grapes which are pressed to old oak casks to lay low for 9 months before bottling without the use of any fining agents. I didn't quite have enough East Coast material to warrant a North, East, South project sorry.
