100% pinot gris from Pooks Hill. A lasagna whole bunches & destemmed pinot gris thrown into a 3000L jarrah wood fermenter.. Skin contact for 21days, pressed to barrel, bottled January 2022.
"My wines have & always will be made from 100% grapes, nothing added & nothing taken away. Farmed organically & hopefully in the near future all of our vineyards will be certified organic. 2021 was a very fun vintage, plenty of grapes of exceptional quality. A more mild summer than previous years which allowed us the to hone in on our picking times. As the fourth year of Chateau Comme Ci Comme Ça this year felt focussed and intentional. Wine making decisions where made with a sense of grounded direction which brings us to the second 2021 release… AUTUMN Wine made for colder days and drinking by the fire, made with more time consideration in barrel, tank and bottle, extend skin contacts & larger expressions." - Aaron
The vineyads: Magpie Springs farm in Hope Valley on the southern range of the Adelaide Hills and is farmed by Steve Thomas. Surrounded by big gum trees, afternoon sea breezes come over Willunga hill straight into the vineyard which sits on sandy loam, clay & ironstone.
Pooks Hill from Robert Surmann’s farm just outside of Hahndorf. Extremely exciting development is that Anton and I are now leasing this vineyard and farming it in house. The vines are 26 years old and grown on black sandy soil which lays onto of petrified schist. Rob has been farming organically for the last eight years. Vines are planted with a south to south west aspect.
