
2021 Château Acid Chardonnay

BACK BETTER THAN EVER. The vineyard: East-facing slope on sandy decomposed granite at 400m above sea level outside Canowindra in the hills of the Central Ranges of NSW. Certified Organic since planting in 1997. The wine: Made in the same way as the last few years, direct press to tank and then racked to 3 old barriques for 9 months, 1 being left un-topped. As usual there's an oxidative element, salty olive brine and nutty, oily goodness, but this year the freshness is dialled way up, acid on par with the front label. No additions, no stirring, racking and bottling done by gravity. 800 bottles produced.
Charlie and Simon started Château Acid in 2017 with a tiny run of 650 bottles. Lucky for us, they make a little more now. Zero adds natty from the Central Ranges. Always on point. We're big fans.
