Pierre Clair took over his grandfather's vineyard in 2006, making wine in parallel to his day job as chef de culture at the prestigious biodynamic Domaine Marquis d'Angerville. His philosophy is simple - whole bunches, old barriques and zero adds (only a touch of sulphur at bottling if the 'test à l’air' is unsuccessful).
Aligoté pét-nat? Wild. White flowers, real lemonade, crunchy green apple and some underripe peach. A gentle salinity, refreshing acidity, heaps of drinkability.
