
2020 Entropy Baw Baw Shire Syrah

From the organically farmed wild dog vineyard in Warragul, from both north and south facing blocks, including the original 1981 plantings. 100% whole bunch for a month on skins, wild ferment and elevage in old oak puncheons. This is the second vintage of this cuvée.
Working under the tutelage of Bill Downie he farms a small plot in Warragul in western Gippsland, a little over an hour's drive to the south-east of Melbourne. This sub-region, known as the Baw Baw Shire, sits at the southernmost extremity of the Great Dividing Range, where the soils are made up of decomposed volcanic basalt. Rainfall is considerably higher than in metro Melbourne, with over a metre of rain falling consistently throughout the year. Volcanic soils, with the ability to dry farm, make for a unique vineyard zone and the potential for true terroir expression.
