
2019 Maison A&S Bourgogne Aligoté

100% Aligote. The grapes come from the En Perthuis vineyard, which is located about 4-5 km west of Beaune. The Aligote is pressed directly after the grapes are picked, with an old horizontal wooden press. Elevage is about 16 months, where there is ongoing tasting to follow the development. When they assess that the wine is ready, it is collected in a steel tank for about 2 months to settle post racking. Minimal SO2 addition prior to bottling.
After a chance meeting at a dinner party nearly 10 years ago Alexandre Aires and Pierre-Alexandre Soltana became great friends and after years working in similar roles they decided in 2018 to start their project Maison A&S. Pierre-Alexandre has worked for Comtes Lafon for more than 10 years. Alexandre has worked for 8 years for Domaine De Bellene where he performs all the cellar work. Maison A & S ‘philosophy is to work in harmony with nature to get the best fruit under the most perfect conditions, to make the best wine to bring people together and share about it and always try to make it better. For now they buy their grapes from organic producers who are also their friends but are in the process of beginning a lease for the 2022 growing season. In the cellar they make no additions other than small amounts of sulphur.
