60% escursac, 20% callet, 10% callet negrella, 5% gorgollassa 5% esperó de gall. A portion of the escursac, 20%, was carbonic maceration. The remaining grapes, 20% whole bunches 60% de-stemmed, were macerated for 25 days. Fermented and elevaged in a mixture of stainless steel and ceramic.
Red fruits and violets. Supple dark fruits, feathery fine tannins. The palate is focused. Pepper and mineral, fresh and elegant. Black currants and wisps of salinity. Opens to plums, soft herbs. Detailed and poised. Breezy and fine, washes of black fruits travel the spine.
Ve d’Avior is the personal project of Cati Ribot, a third generation grape farmer, the inaugural vintage in 2019. Her families 14 hectare estate, Galmes I Ribot, is located in Santa Margalida, north east Mallorca. An island bathed in sunshine, the summers are hot, the winters mild. Fifteen kilometers from the Mediterranean sea near the Bay of Alcudia, the vineyards benefit from both the Mistral and Tramontana winds in addition to the sea breeze. The soils of Santa Margalida are iron-rich clay with a lot of calcareous rocks.
