
2017 Domaine Achillée Pinot Blanc Oxydatif
The Dietrich family has farmed land in Alsace since 1600, working organically from 1999 and biodynamically from 2003. Achillée is the name for yarrow, a plant used in biodynamic farming and one that grows abundantly on the Dietrich family’s vineyards. Fun fact - their cellar is the largest building in Europe made out of straw. | Hand picked, wild ferment, aged on lees for 12 months, followed by a further month of deliberate oxidation for complexity. White flowers, peaches and plums make way for beeswax, dough and saline minerality.
