Saison Aperitifs Fallen Quinces Vermouth (2023)

For our 2023 Fallen Quince we took a step back and completely reassessed every little step of flavour development, approaching with a fresh set of eyes. Some minor and major changes have resulted in a bigger, richer and more balanced version than vintages past. We have also moved to a solera style production method for this vermouth where a portion of this release has been aged in old Pinot oak for a year. As always we begin with stunning organic pineapple quinces grown by good people. Infusions are made of saffron, bay leaf and blood orange amongst other things. These are blended into a moscato wine base, bittered using two kinds of wormwood and sweetened slightly using a caramelised quince sugar. The vermouth is then left to age resting on quinces that have been burnt over a wood fire adding an extra layer of bitter complexity.
The seasonal vermouths from Dave Verheul's 'Saison' range need no introduction. Dave has been hand-making his fine, gastronomic vermouths for a few years now - initially in the kitchen of his Melbourne restaurant Embla, and more recently in his own vermouthery.
