This cuvee was hand harvested together and macerated for 2 weeks for a more intense and powerful expression. There is more weight across the mid palate, with apricot and spice notes from the Malvasia’s time on skins. The acidity is persistent and moorish.
Jacopo Battista farms three and a half hectares in the hills of Umbria with his Aussie partner, Trish Nelson (Gazzetta). With vines up to 75 years old, close to 500m above sea level on volcanic soils, Jacopo spent years nurturing his previously neglected vineyards back to health. Organic farming, zero/zero winemaking.
